Hi Cassidy, thank you for your question. Our Classic whey is just organic whey protein while our regular version has organic sunflower lecithin added so it mixes easily in liquids. We recommend Classic if you will be using a blender. NorCal Organic started in 2011 and has worked with the same farms since the beginning. Raw Organic Whey is a newer company and received a large number of very positive reviews very quickly from single review amazon members. Raw Organic Whey also has changed its website over time so as not to mislead people that their product is raw, this was not always the case and their name is a bit confusing in this regard.

40mg is on par with most other protein brands, and some organic whey proteins have cholesterol as high as 50-60mg per serving. When you see protein brands with lower cholesterol numbers it is usually because they contain isolates and/or have been over processed. Thanks for the question.
Hi Sharon! Actually there are no whey proteins on the market that are actually "raw." When dairy products are sold across state lines, they must be pasteurized under FDA regulations.
